Tofu Vegetable Stir Fry
9 ounces smoked tofu,
1 tsp corn starch
1 1/2 Tbsp of soy sauce,
2 Tbsp curry powder
2 cups mixed vegetables
Rapunzel olive or canola oil.

Cut tofu into cubes and marinate for 15 minutes in a mixture of the soy sauce, corn starch and curry powder. Saute the tofu. Wash, cut and fry the vegetables separately in olive or canola oil. Combine and spice with herbs, salt and pepper.
