Andalusian Roast Garlic Potatoes

Such bold flavor from a simple combination of pure olive oil and caramelized garlic elevate buttery Yukon gold potatoes to star status. These potatoes are wonderful served room temperature drizzled with additional Rapunzel Organic Olive Oil. Serve them with roasted meats or grilled seafood and poultry.

2 pounds Yukon Gold Potatoes, unpeeled, cut into large chunks
2 tablespoons Rapunzel Organic Olive Oil
6 cloves garlic, minced
1 teaspoon sweet paprika
1-1/2 teaspoons oregano
salt and pepper to taste
½ cup cupped fresh parsley

Preheat oven to 375 degrees F.

In a saucepot, place potatoes in water to cover and bring to a boil. Simmer for 3 minutes and drain. Toss warm potatoes in a mixing bowl with olive oil, garlic, paprika, oregano, salt and pepper. Spread potatoes evenly on a baking pan and bake uncovered for 25 minutes until golden brown, turning once after 15 minutes. Sprinkle with chopped parsley and serve. Drizzle with additional Rapunzel Organic Olive Oil before serving.
