Pumpkin Maple Glaze
Makes 2 cups

This recipe has been developed by renowned chef and author Steve Petusevsky

Rich, earthy and golden brown with caramel and pumpkin overtones, use this glaze to baste roasts, grilled meats, poultry and game. It can also be used to impart a flavorful glaze on winter squash or even used sparingly as a salad dressing.

1 cup orange juice
¼ cup light brown sugar
1/3 cup pure maple syrup
juice of 1 fresh lemon
½ teaspoon cinnamon
1 tablespoon tamari or soy sauce
2 tablespoons Rapunzel Organic Pumpkin Oil

Combine all ingredients in a medium mixing bowl with a wire whisk. This all purpose glaze will last for 2 weeks covered in your refrigerator.

Chef Steve's Tips:
Drizzle over shredded cabbage and carrots for an exotic slaw.
Brush apple slices and broil for a unique dinner garnish.
Use as a glaze to elevate roast ham to star status.
