Watch the temperature gauge when cooking with Rapunzel culinary
oils! Any oil that is heated too much can start to smoke in
the pan. Excess heat causes damaging molecular changes in oils; the
microbiological health of the oil is destroyed, making it impossible
for the body to digest. If your oil smokes, turn off the heat and drain
off the oil; start over with fresh oil, cooking at lower temperatures.
Some oils are better to cook with than others. Generally, organic unrefined
oils break down easily compared to industrially refined oils.
