Safflower oil is a light-tasting oil good in cold dishes and for garnishing
salads.
The safflower thistle, Carthamus tinctonis, originated in India and
Japan. Today it is cultivated as an oil plant, predominantly in South
America and Australia. It is only pressed and filtered; no other processing
or refining is done.
