The method to produce bread with sour dough is thousands of years old and was probably discovered by the Egyptians. By 1850, Louis Pasteur found a way to explain and utilize the fermentation process of yeast. The yeast’s bacteria, which are microscopically small life forms, are able to create carbon dioxide when mixed with flour and water. The lactic acid bacteria which are also present in this fermentation process, are responsible for the essence of the full-bodied ‘bread’ taste you experience.

When World War I caused a scarcity of grains in Europe, the baking industry started using molasses as a medium for making yeast. Molasses is a by-product of the sugar production and by itself, it’s a very healthy and nutritious product. But, using chemicals like ammonia, sulfuric acid, phosphoric acid and magnesium phosphate, makes the traditional yeast production a polluting. In the mid 90 ‘s Rapunzel started a cooperative business venture with a yeast manufacture in Germany by the name of Agrano, to create an organic yeast that is both healthier and free of the unnecessary chemicals used in the manufacturing of conventional yeast.

Selected yeast strains and lactic acid bacteria cultures are bred in an organic nutrient solution made from organic grain, pure spring water and enzymes. All of the microorganisms and raw materials are guaranteed GMO-free.
The fermentation process uses no chemicals, and organic sunflower oil is used as a de-foaming agent. RIZE Organic Yeast requires no rinsing. Since all plant equipment is steam-cleaned and disinfectants are unnecessary, even the wastewater from a full plant cleaning is free from contamination. The fermentation medium also forms the basis for further organic products such as drinks and yeast flakes.

Conventional Yeast Production

Conventional yeast production utilizes chemical nitrogen sources such as ammonia, ammonium salts and lyes, plus a variety of acids (including sulphuric acid), synthetic vitamins and growth substances. Conventional yeast requires several rinsing stages after fermentation, to remove unpleasant tastes and odors. The resulting wastewater is heavily contaminated and requires a complex purification process.
